HEALTHY AND GOURMET

Craving cake first thing in the morning? What if I told you it could be healthy?

Yes, with my energizing and delicious cake-flavored breakfast, with a muesli texture and remarkable nutritional properties.

This muesli is rich in protein, carbohydrates, vitamins, and minerals.
It's perfect for autumn, a transitional season between summer and winter when we need to slowly acclimate our bodies to colder temperatures.

Plus, it's a breakfast that practically makes itself! (Well, you do have to make a little effort, but it's truly magic, I promise.)

While you sleep, your breakfast is working! Chia seeds, flakes, and dried fruits absorb liquid to make them even easier for the body to digest and assimilate.

Prepare the muesli the night before and 1… 2… 3… well, 8 hours of sleep, we hope!
The next day, open the fridge and there you have it: breakfast is served.

It's easy to take to the office and will keep you full until lunch, especially if you add a banana, seasonal fruits, nuts, almond butter, or even homemade granola* (*recipe coming soon, stay tuned!).

Ingredients (for one serving)

  • 200 ml almond milk
  • 50 g rolled oats (or optionally: buckwheat, rice, or quinoa flakes for a 100% gluten-free version)
  • 1 tablespoon chia seeds
  • 1 tablespoon shredded coconut
  • 1 to 2 tablespoons dried white mulberries or dried figs
  • ¼ tsp vanilla powder
  • ½ tsp ginger powder (or to taste — I like it very gingery!)
  • Optional: 1 tablespoon Peruvian carob or raw chocolate

Toppings:

  • ½ grated apple
  • ½ banana

Preparation

Put all the dry ingredients in a bowl and mix well.
Pour the almond milk over everything and then stir with a spoon.

Let it rest for 5 to 10 minutes (and you, too, take a good rest at the same time!), then mix again, cover, and place in the refrigerator.

In the morning, add the sliced banana and grated apple.
You can also sprinkle with homemade granola for extra crunch (recipe to follow…).

Spotlight on… chia!

CHIA: shee-ahh or kee-ahh, no matter the pronunciation (personally, I opt for the American version shee-ahh), chia seeds are a true goldmine for health!

These small black or white seeds are rich in soluble fiber, omega-3s, protein, and plant-based omega-3s. Chia also contains calcium, potassium, iron, and vitamin C.

Chia seeds promote body hydration throughout the day and strengthen digestion.

They resemble poppy seeds, then, upon contact with liquid, they swell to become a kind of "tapioca-style" pudding.

This chia "gel" can also be used to replace eggs in some baking recipes.

It's a little surprising at first, but trust me: chia is a best friend food that you won't want to live without!
