Ingredients

- 1 small glass of Camargue red rice
- 1 lawyer
- ½ mango
- A few fresh coriander leaves
- 2 tbsp of olive oil
- 2 tbsp lemon juice
- Fleur de sel

Recipe

- Cook the red rice in a large volume of boiling water. Let it cool.

- Cut the mango and avocado into small pieces. Mix with the rice.

- Add the fresh coriander, oil, lemon juice and fleur de sel.

Keto-tarian option: replace the red rice with kale (steam for 5 minutes) and the mango with one or two eggs or a piece of grilled salmon.

Avocado: This superfood contains plenty of good, heart-protective fats (like oleic acid, which raises good cholesterol) and little saturated fat. It's rich in vitamin E, an antioxidant, and vitamin K, which regulates blood sugar. It's also a source of fiber, essential for healthy digestion.

Mango: Rich in polyphenols and vitamin C (our antioxidant allies) as well as beta carotene, a precursor of vitamin A, which plays an essential role in vision and cell renewal.
